In earlier times, many brewers used wooden tools.
Many types of sake are produced, such as ki-moto jikomi and yamahai jikomi long-aged sake.
Pursuing excellence by bringing together the brew master’s skills and the most advanced technologies

What makes sake truly outstanding? At the Shirakabe-gura Brewery, the priority is not on seeking efficiency in production of sake. Instead, returning to the origin of sake brewing, we spent three years building the brewery. The Shirakabe-gura Brewery represents the marriage of the contrasting elements of new facilities that have recreated the principles of traditional handcrafted methods, and brewing techniques where most processes are done by hand.
The Shirakabe-gura Brewery boasts highly advanced equipment, including rice mills introduced after repeated testing; continuous rice steamers that reproduce the principle of traditional Japanese rice cookers; and a rice malt making machine developed jointly with a machine manufacturer. Each machine is managed responsibly by operators through the 3M (My Machine Management) technique.

The Shirakabe-gura Brewery has two production lines. One incorporates traditional handcrafted brewing and the other is equipped with the latest facilities. But no matter how advanced the machinery becomes, the final decisions will always be up to people operating them. The master brewer determines all operating conditions, while other brewers check the conditions of the sake in each process by using their five senses. We are ambitiously working to produce truly high-quality sake through the cooperation of all the brewers.
